April 30, 2008 may go down in history as the day of Chicago’s Biggest BBQ.  The AP recently reported that 50,000 lbs of ribs went up in flames after a truck hauling the meat caught fire along an Illinois interstate.  It is my humble opinion that the local fire company should do their best to maintain said fire at a temperature no greater than 250 degrees for the next 6 hours.  If at all possible, they should try and foil the ribs approximately 1/2 way through the cook to keep them from becoming too dry.  Local authorites should also do their best to pursuade a beer truck or two to pull up and help the cause.  If done correctly, they’re gonna have one hell of a BBQ on their hands by sundown!
