How To: Make The Best BBQ Rubs
Fire’n up the smoker this weekend? Try any of these rubs and you’ll take your BBQ from good to great!
Magic Dust
I had the opportunity to meet Mike Mills a few years ago and he is the ultimate guy’s guy. I highly recomend you jump at the opportunity to eat at any of his restraunts across the country. If nothing else, his recently published the book Peace, Love and Barbecue is a great read and has some excellent recipes including his infamous “Magic Dust”- the rub he used to become the only 3 time Grand World Champion at the Memphis in May competition. This rub works wonders on pork butts, shoulders, or ribs
- 2 Tablespoons paprika
- 1 Tablespoon kosher salt, finely ground
- 1 Tablespoon sugar
- 1 Tablespoon chili powder
- 1 Tablespoon ground cumin
- 1 Tablespoon granulated garlic
- 1-1/2 teaspoons mustard powder
- 1-1/2 teaspoons ground black pepper
- 1-1/2 teaspoons cayenne pepper
- Combine all ingredients and mix thoroughly. Store in an airtight container.
Best Ribs In the Universe
Mike Scrutchfield won the prestigious title “Best Ribs in the Universe” at the 1993 American Royal Bar-B-Que contest as the Overall Grand Champion. They also won “Reserve Grand Champion” at the 1994 American Royal. You can save yourself a lot of time trying to find the best rib rub out there… this is it:
- 1 Cup Sugar
- 1 Cup Non-Iodized Table Salt
- ½ Cup Brown Sugar (Dried out lightly by exposing on cookie sheet room temp. several hours, or slightly warmed
- 5 Tablespoons + 1 Teaspoons Chili Powder
- 2 Tablespoons + 2 Teaspoons Ground Cumin
- 4 Teaspoons MSG (Accent)
- 4 Teaspoons Cayenne Pepper
- 4 Teaspoons Black Pepper freshly ground (important)
- 4 Teaspoons Garlic Powder
- 4 Teaspoons Onion Powder
- Combine all ingredients and mix thoroughly. Store in an airtight container.
