How To: Make Your Own Salsa

It’s tough to look forward to a weekend with no football or any other sport of great importance for that matter.  This weekend will serve as just a small sampling of the shit-tacularly small amount of sports that will be available for Man’s viewing pleasure post Superbowl on February 1, 2009.  The drought starts 2/2 and doesn’t end until college basketball gets interesting with March Madness.  During the drought we Men will be forced to find Manly alternatives for hanging out in our Mantuary.  Well, I’ll be making my own fun starting this weekend.  It’s only been a few weeks since I took then hen away for her weekend surprise, so I’m gonna cash that chip in right away and have the boys over for a good ol’ fashion poker tournament!

I’ll have a fresh keg of Miller Lite on tap though I’ll be throwing in a little twist for those who choose to partake in some high octane poker juice (a.k.a. Scotch – more on that later).  For food I’ll either make pulled pork or smoked sausage and in addition to the cheese and homemade hot bologna I have for “snacking” I’m going to make some home-made salsa.

A few months ago, I received this recipe from my buddy “Flip” and tweaked it just a bit for some extra punch.  One taste of this stuff and you’ll swear it’s laced with crack; you just keep coming back for more.  It’s the perfect dipping salsa, though I’d be lying if I told you I never ate it out of the bowl with a spoon.  This recipe makes enough to feed a dinner party of about 30, or 10 of your poker buddies.

Ingredients:

  • 2- 15 oz black beans, rinsed and drained
  • 1- 17 oz can whole corn, rinsed and drained
  • 3 large tomatoes, chopped
  • 3 large avocados (buy 2-3 days prior for proper ripening), peeled and chopped
  • 1 large red onion, chopped
  • 4 Tbsp lime juice
  • 2 Tbsp olive oil
  • 1/4 Cup red wine vinegar
  • 1 tsp salt
  • 1 tsp fresh ground pepper
  • 1 handful cilantro, chopped
  • 8 garlic cloves, chopped
  • 4 jalepeno peppers, diced (the more seeds you leave, the hotter its gonna be)

Mix all ingredients and refridgerate for at least 2 hours.  Serve with Tostitos, Doritos or eat by the spoonful with a few cold ones.
