How To: Make BBQ Chicken Pizza

While I’m not putting much emphasis on the stock market pop yesterday (we still have a bunch of economic issues to solve before we’re completely clear), I’ve got to admit, seeing green for the first time in a long time felt pretty darn good.  To celebrate, I picked up a chicken and bottle of single malt on my way home from work.  I got home, hugged the kids and made some BBQ Chicken Pizza while buzz’n on a Macallan 12.  First, I fired up the Primo and cooked the chicken for about 2 hours.  Once cooked, I pulled it off the grill and let it rest for about 15 minutes before pulling all the meat off.  Meanwhile I prepped the Boboli shell (making my own dough is next project):  instead of tomato, I used BBQ for my sauce.  Then I mixed the chicken with fresh grated mozzerella and put it on top.  Sprinkled some BBQ rub over the contraption and put it back on the smoker for 12 minutes. 

The pizza turned out great and I even have 1/2 the bottle of Macallan left to see me through the red days that are certainly going to haunt us once again.
