My mantuary is the only room I can hang a Pam Anderson in her red Baywatch swimsuit that I bought at Spencers, and not have a frame for it. I generally use hickory, but I've mixed apple and hickory also. I use only the front burner and place the smoker boxes over the burner. After rubbing the ribs, I put then in a rack in a roasting pan that has one bottles' worth of beer. The beer will cook up into the ribs, making them moist. After 2 hours, I foil them, then grill on low flame for 2 hours. I then have the option of freezing them for a quick weeknight ribfest, or saucing and grilling them. My wife is never in here; she has a laptop so the room is mine. It's also the baseball room -- the TV is hooked to my secondary computer so I can watch MLB.tv games. Being able to watch nearly any game I want is sweet, even with the annoying commercials they started last year. Regardless of what you call it, it's our space!
